This is the first cake that i made last summer
on my own. I made the cake for a friend at work. The fondant is made with marshmallows and powder sugar. It took 5 hours to make. Baking can be very time consuming but that's what i like about it. I did make quit a few mistakes on this cake. But we learn from our experiences right.

Fresh Apple Cake

Servings:12
Yield:1-9x13 pan

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
4 apples - peeled, cored and sliced
1 cup white sugar
1 cup brown sugar
1 1/3 cups vegetable oil
2 eggs
2 teaspoons vanilla extract
1 cup chopped walnuts (Optional)

Directions
Preheat oven to 350 degrees F. Grease a 9x13 inch pan. Sift together the flour, baking soda, cinnamon and salt. Set aside.
Combine the apples and the white sugar; set aside. In a large bowl, mix together the brown sugar, oil, eggs and vanilla. Stir in the apple mixture, then the flour mixture. Fold in the walnuts.
Pour batter into prepared pan. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Ive made this recipe acouple of times for Christmas and Thanksgiving. Its a great recipe i had a lot of complements on it. The cake is very moist and it doesn't need any frosting.
